How to have your (Pan)cake and eat it! Our Senior Performance Nutritionist Irene Riach keeps it healthy but super tasty with an easy pancake recipe and amazing topping suggestions #hungry Ingredients 1 cup of self-raising flour 1 tablespoon of caster sugar 1 free range egg 1-1.5 cups of skimmed milk or buttermilk (enough to make a batter that coats the back of a metal spoon) To make: Sift flour into mixing bowl and stir sugar into flour Whisk egg then add in the milk or buttermilk and whisk. Stir wet ingredients into the dry until just combined (no flour should be visible but don’t over mix or pancakes will be tough!) Heat a frying pan or griddle over a medium heat Add a 2 tables spoons of mix to the hot pan and leave until bubbles appear on the surface Turn pancakes over and cook until golden on the other side Add healthy topping of your choice... et voila! Toppings: Banana, cinnamon and honey Blueberries with low fat crème fraiche Grilled mango and peach slices with maple syrup Grilled pineapple (sprinkle with demerara sugar before grilling for extra treat) Mixed berry compote (rasps, blackcurrant and redcurrant when all are in season make a big batch and freeze in handy portions)
